In 1152, Bernard had a vaulted cellar built, which today belongs to the Drappier house. It is a cuvée made from 75% Pinot Noir, with the remainder being Chardonnay, Pinot Meunier, and Blanc Vrai (Pinot Blanc). Only the juice from the first pressing (cuvée) was used. The pressing was done mechanically with low pressure. The must flowed by gravity into the tanks. The natural clarification occurred naturally. Fermentation in stainless steel tanks lasted about two weeks at a low temperature. This was followed by a natural and complete malolactic fermentation. No cold stabilization, no filtration, minimal sulfiting under 20 mg\/l. Aging on the lees lasted about three years. The acidity is not as pronounced as in other champagnes from the house, but the minerality is all the more distinct and brings a lot of energy to the Clarevallis. Here too, mainly juicy, ripe fruit notes are found in a powerful body, supported by a lively but well-integrated mousseux.
