For the rosé, we use 100% Pinot Noir grapes here.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAfterwards, the sparkling wine rested on the lees for 55 months. It was disgorged \"pas operé,\" meaning only with the wine from the same batch without the addition of dosage or anything else.
