The Chardonnay blend was completed on March 30, 2018.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAfterwards, the sparkling wine aged on the lees for 59 months. It was disgorged “pas operé,” meaning only with the wine from the same batch without the addition of dosage or anything else. No cold stabilization, filtration, or fining was performed. These mainly recall crushed limestone and chalk, lemon juice and zest, some bitter orange peel and grapefruit, almond croissants, and a hint of Manzanilla.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003e\u003cspan\u003eOn the palate, when enjoying the \u003ci\u003eBlanc de Blanc\u003c\/i\u003e, one naturally thinks of a long-aged Jura Chardonnay where a small amount of Vin Jaune has been integrated. Here you find deliberately oxidative notes of tart cider apples and walnuts combined with a fresh impression of citrus notes and a lively acidity that builds great tension. There are also hints of preserved lemons, some aged hard cheese, and bitter orange.
