The average age of the \u003c\/span\u003e\u003cem\u003eSélection \u003c\/em\u003e\u003cem\u003emassale\u003c\/em\u003e\u003cspan\u003e is 55 years. The vines are rooted in gravelly and calcareous sands on a limestone subsoil. The base wine from the Cœur de Cuvée was spontaneously fermented and aged for nine months in barriques. A natural malolactic fermentation took place.
