VenetianProbably the most renowned white wine from the Custoza region: The Amedeo Superiore from the Cavalchina winery is a true flagship of the area – named after Prince Amedeo of Savoy, who was wounded during the Battle of Cavalchina in 1866. The grandfather of the current owning family not only had the courage to print the name Custoza on a label for the first time but also planted the vines for this top wine in the best locations directly at the estate – overlooking the moraine hills south of Lake Garda.
In the glass, the Amedeo reveals itself as complex, dense yet restrained: delicate aromas of peach, mirabelle plum, pear, and white blossoms, along with a hint of herbs and minerality with low acidity. On the palate, dry, medium-bodied, with a fine balance of sweetness and acidity and a silky smoothness. Long, harmonious finish with aging potential. The Cavalchina Amedeo Custoza Superiore is a perfect companion to fish and seafood, white meat, risotto, fine antipasti, creamy cheeses – or simply enjoyed solo as a sophisticated wine.
Vineyards:
The vines grow on gentle hills at 120 to 140 meters above sea level with a southern exposure. Cultivation follows the Guyot system. The soils consist of calcareous, clayey moraine gravel with gravel components – ideal for elegant white wines with structure and finesse.
Harvest:
Only the best grapes are strictly handpicked, depending on the individual ripening time of the varieties. Decades of experience allow a selection that brings out the full aromatic potential of the blend while ensuring remarkable aging capability.
Vinification:
Each grape variety is vinified individually to optimally highlight its character:

Fernanda (a local variant of Cortese) shows its semi-aromatic profile through vinification after freezing the grapes. After harvesting in small crates, the grapes are frozen at -10 to -12 °C, then slowly warmed to 0 °C and pressed with stems. The ice on the berry skins breaks down the cell structure and releases the typical varietal aromas.

Garganega, an elegant, finely structured variety, is fermented under slightly reductive conditions to highlight its typical minerality .

The more neutral but full-bodied varieties Trebbiano and Trebbianello are vinified classically and provide backbone and structure to the blend – while supporting the aromatic qualities of Fernanda and Garganega.
After static clarification, fermentation takes place at 16–17 °C. A key quality feature is the targeted work with the fine yeast (bâtonnage). Malolactic fermentation is deliberately avoided to preserve freshness and structure.
