It is lively, well-structured, and of a pleasant complexity, emphasized by valuable mineral notes and a refreshing acidity. With a long, creamy finish accompanied by smoke, spices, and a delicate hint of cinnamon. The soil, rich in limestone skeletons, features tuffaceous soils. The harvest is done by hand from the third decade of September. The grapes are carefully selected and handpicked. Vinification takes place by maceration on the skins with whole grapes. This is followed by a gentle pressing of the entire grape mass. Spontaneous fermentation occurs at controlled temperature in large wooden barrels. The wine matures for one year on fine lees in wooden barrels and six months in concrete tanks.
